Hard Red Winter
Cool/damp weather has continued to be a factor for harvesting wheat in the northwestern Nebraska Panhandle and South Dakota this week. These areas, along with Montana, are the major remaining areas of HRW to be harvested. The 2010 Montana HRW harvest is just now starting with only two locations reporting preliminary activity. Harvest is being reported much later than normal from NE Colorado northward into the Nebraska Panhandle and Montana.

Early evaluation of southern production areas for dough and bake data by low protein (< 11.5%), medium protein (11.5% – 12.5%), high protein ( >12.5%) and composite of all protein levels, is partially complete. Tests indicate farinograph absorption (14% mb) by protein level is low 57.3%, medium 57.4%, high 59.3%, and composite 57.9%; farinograph development time is low 4.0 minutes, medium 4.9 minutes, high 5.9 minutes, and composite 5.1 minutes; farinograph stability, low 11.3 minutes, medium 12.5 minutes, high 13.5 minutes, and composite 12.3 minutes. Loaf volume is low 766 cc, medium 828 cc, high 893 cc, and composite 822 cc. Individual testing data can be viewed at www.plainsgrains.org. Soft Red Winter
There have been no significant changes to the grade information after including this week's results. The average test weight continues to be improved over last year's final average of 57.8 lb/bu, foreign material is 0.3% compared to 0.0% last year, and damage is decreased to 1.4% compared to 2.3%. According to NASS statistics production, the states included in the survey harvested a low average of 37 bu/acre in North Carolina to a high average of 66 bu/acre in Ohio.

Flour ash from the laboratory mill is very acceptable (0.40%-0.45%). Farinograph absorption is trending higher than last year, with the exception of Indiana, while bake results are similar to last year.
